Chicken and Sausage Gumbo
Ingredients:
50 gms chicken breast, cubed
10 gms onions, chopped
10 gms green bell pepper, diced large
10 gms celery chopped
a pinch thyme
a pinch chili powder
a pinch cayenne
a pinch paprika
a pinch ginger powder
100 gms okra
10 gms garlic chopped
1 tbsp flour
2 cups chicken stock
50 gms sausage, sliced
a pinch file powder
to taste Tabasco Sauce
5 gms spring onion, chopped
5 gms parsley, chopped
to taste salt
to taste pepper
Procedure:
1. Sear chicken, then set aside.
2. Sauté onions, bell pepper and celery.
3. Add all seasonings.
4. Add okra and garlic.
5. Add flour.
6. Add stock, sausage and chicken.
7. Add file powder and Tabasco.
8. Season, boil then simmer.
9. Sprinkle with spring onions and parsley.
TIP: Don't overcook vegetables in soups like gumbo. Vegetables add texture and volume to the soup. |
