Roasted Tomatoes Stuffed in Yellow Dal
four large red tomatoes
Lentil Stuffing:
dash of salt dash of red chili dash of turmeric dash of black pepper dash of cumin 1 teaspoon garlic, finely chopped 1 medium red onion 1 cube shiitake stock 1 teaspoon ginger, finely chopped
Procedure: 1. Boil 1 cup red lentils (washed and drained) in 3 cups of water till soft. 2. Sauté onion, garlic, powdered chili, turmeric, black pepper, cumin, coriander and salt to taste. 3. Chop off the top of the tomatoes and core out the seeds. Stuff with the lentil mixture. Put into the oven toaster for 15 minutes or until tomatoes are tender and just slightly roasted. 4. Serve hot. |
